Mashed Cauliflower

 

Being married to a potato farmer certainly has its benefits if your weakness has always been potatoes in any form: mashed, roasted, fried, wedged, baked, twice baked, hashed, and the possibilities are endless! But the time comes (and dear sweet Hubs did try to warn me!) when potatoes just don’t have that same appeal they used to have. And of course, if your eating habits change like ours have (we usually eat THM style now), then a potato substitute like cauliflower is the perfect solution! 

Cauliflower is not my thing. I love me some broccoli, especially my dad’s recipe, but not cauliflower. Blech. No one, and I mean NO ONE, could have ever convinced me I would one day crave it like I used to crave potatoes! It smells bad and I’m not crazy about the taste but when processed until smooth with butter, heavy whipping cream, a dash of Himalayan sea salt and black pepper and all cauliflower-hating thoughts fly right out of my head! This is good, even our kids enjoy mashed cauliflower! Give it a try and let me know what you think of it!

Mashed Cauliflower

2 bags frozen cauliflower (16 oz each)

1-4 tbsp real butter (not a butter substitute)

1/4 cup heavy whipping cream

Dash of Pink Himalayan sea salt & black pepper

Directions:

1) Steam a bag of frozen cauliflower until fork tender. 

2) Toss in your food processor with heavy whipping cream, sea salt and black pepper. Use the medium setting and process until it’s smooth and creamy.

3) Serve hot! (If the rest of your meal is not finished, keep this dish on the warmer until everything is ready!)
