Ok so this title may be a bit misleading. I mean, I haven’t won any awards for this particular bean salsa recipe, other than my own kids’ accolades of course and I’m probably jumping the gun a bit assuming it WOULD win a prize….but anyhoo…

This hot weather is making me hungry for cold foods! We have been snacking on ice cold, sweet watermelons and bean salsa every day!
It’s actually become an obsession eating this bean salsa. I snag a bowl and creep behind the recliner in the corner of the living room, quietly munching and praying the kids don’t hear me or I’ll have to share!
Last week, I shared a post about healthy summer snacks for families and I suggested some fun dipping foods my kids and I love but I didn’t give you an exact recipe! I hope to remedy that today and give you the best bean salsa dip recipe you’ll eat all summer long.
I just make do with whatever ingredients I have on hand so if you like onions and you have them in the kitchen, go ahead and use the real thing!
Ingredients:
2 diced tomatoes
2 diced avocados
1 can black beans, drained and rinsed
1 can shoepeg corn
Pink Himalayan sea salt (I just give it 2-3 good twists in the grinder)
Pepper
2 tsp Onion powder
2 tsp Garlic powder
2 long squirts lemon juice
chopped cilantro
Mix well and refrigerate for several hours before serving with tortilla chips.
That’s it! Easy peasy! Whip up this batch of bean salsa and serve it at your 4th of July celebration or just hide it in your fridge and hoard it for yourself. You choose. ☺️ I hope you love it!
