Breakfast burritos
When I brown ground pork, I usually cook several more lbs than I need and freeze the meat in ziplock bags. It makes breakfast burritos, Copycat Zuppa Toscana soup, and sausage-stuffed shells incredibly quick and easy. These burritos are simple although you can be as creative as you want and add any other ingredients you wish!
Ingredients:
2 tsp coconut oil
1 1/2 cups ground sausage
8 eggs
1 tsp onion powder
1 tsp garlic powder
Salt and pepper, to taste
Shredded cheddar cheese
Tortillas (I prefer Mission Whole wheat low carb, while the kids use regular white or wheat tortillas)
Directions:
1) Heat the coconut oil in a large cast iron skillet on medium-high heat.
2) Cook sausage and until well done or if it’s pre-cooked and frozen, heat until warmed throughout.
3) When it is thoroughly cooked, reduce the heat to low, add the eggs and seasonings, scrambling them until cooked through, about 3 minutes.
4) Remove from burner and set aside. Warm tortillas in the microwave for 10-15 seconds. Layer sausage and egg mixture in the tortillas by spoonful until desired amount is reached. Sprinkle with cheese, roll up and enjoy with a Smoothie!
Try spicing things up a bit and adding black beans, salsa, bell peppers, or onions to your burritos! Let me know how they turn out!
