Farm Fresh Pancakes (including a THM version!)

The best part of living on a farm is the food. For real. Fresh eggs. Fresh country sausage. Fresh orange juice. Fah-resh everything. We are a pancake-loving family because waffles take way too long to cook they’re easy, affordable, and I can make my own Trim Healthy Mama version and have my pancake and eat it too.

Our 8 and 9-year old daughters are old enough to make pancakes now and this is a simple recipe they can follow. While they’re flipping cakes for the rest of the family, I’m whipping up a batch of Trim Healthy Mama pancakes for myself.

Our breakfast the other morning evening consisted of pancakes (with my THM version!), scrambled eggs and sausage, and fresh-squeezed orange juice from the trees out back. Delish! We hope you enjoy them as well!

 

Farm Fresh Pancakes

2 1/2 cups all-purpose flour

1/4 cup sugar

2 tsp baking powder

2 tsp baking soda

2 pinches of salt

2 eggs

2 1/2 cups buttermilk*

1/2 cup oil

  1. Preheat griddle over medium heat.
  2. In a food processor or blender, combine all the ingredients until smooth. Ladle one scoop at a time onto the hot griddle. Flip when the pancakes begin bubbling. Let them cook 1-2 more minutes before removing and placing in a warming tray.
  3. We like to serve the pancakes with maple syrup or a scoop of vanilla yogurt and chopped fruit, scrambled sausage and eggs, and orange juice or milk.

*Buttermilk can be substituted with 2 1/2 cups milk and 1/4 cup lemon juice or white vinegar. Let stand for 5 minutes before combining with other ingredients.

 

THM Pancakes (for mama or anyone else watching their weight!)

1 cup old fashioned oats

1 cup liquid egg whites (or the whites from 7 eggs)

1 cup low-fat cottage cheese

2 tsp baking powder

dash of vanilla

Blend oats in food processor until they turn into a powder. Add remaining ingredients and blend until smooth. Ladle onto hot griddle in desired sizes. (Mine makes about 9 pancakes, or 3 servings). Top with greek yogurt and berries. Store remaining pancakes with a paper towel between each pancake in an airtight container in the fridge.
