French’s Crunchy Chicken

 
Not freaking out at all, but did you know Christmas is next Sunday??? Have you finished shopping? I’m usually running around helter-skelter this time of year grabbing last minute gifts and baking and just making sure everything is perfect for Christmas. 

If that’s you, then you need this recipe! It’s fast, delicious and your family will thanks you for remembering to feed them while you’re gathering up those gifts. (Not saying I’ve ever done that, just saying!)

I’m always looking for new recipes to feed our family of eight. Ok, no actually, it’s more like I’m always rifling through the cabinets to scrounge up a meal because I forgot to thaw out the meat for our meal plan and now I’m in a bind. Sound familiar? 

Ah, the best laid plans…

The same thing happened tonight except that I had the thawed chicken but no meal plan. Scrounge, scrounge. Rifle, rifle. Grab two cans and call it a meal. 

All you need are boneless, skinless chicken breasts, cottage cheese or some other sour substitute like plain Greek yogurt or sour cream, a can of cream of chicken or mushroom soup, shredded cheese, and crispy onions.   
 

Place chicken breasts in greased baking dish and preheat oven to 375 degrees. In a medium bowl, mix 1/2 cup cottage cheese (or your sour dairy substitute), 1 can cream of chicken soup, 1/2 cup of cheese. You may thin with a couple of tablespoons of water or just carefully spread over chicken. Sprinkle crushed crispy onions over the top. Pop in the oven for 30-35 minutes or until chicken juices run clear.  
  

Serve while hot and crispy with a side of pasta (hey, that’s all we had in the cabinet!) and spicy buttered broccoli. Enjoy!
